About Broccoli

Grape Salad with Almonds

My friend SanDee is not only a great cook, but she always has fun parties with interesting guests.

Among other things, she makes her famous Spaghetti with Turkey Meatballs.

I remember on one occasion she served a wonderful side salad that had her favorite vegetable, broccoli, with red grapes and onions.

I loved it and asked her about the recipe.

She told me she saw it on the Food Network.

It was a perfect salad – crunchy, tangy and sweet.

Almost additive.

So when I was at the market the other day, they had beautiful red grapes they were sampling.

They were juicy and sweet and I thought about that broccoli salad.

I had to make it, especially since I knew it would be a perfect side to the Roasted Lemon Chicken I was planning.

Savory chicken with the sweet, tangy crunchiness of the salad. What could be better?

Ingredients of Broccoli Grape Salad

  • Mayonnaise
  • Honey
  • Lemon Zest
  • Lemon Juice
  • Salt
  • Pepper
  • Broccoli
  • Red Grapes
  • Red Onion
  • Toasted Almonds

How to Make Broccoli Grape Salad with Almonds

I keep the sauce fairly light and instead of sugar I like to add Karo syrup. I watched my aunt make pear salads with that topping.

Not only does it blend better with the mayonnaise, it just makes the dressing taste richer.

So in a small bowl, mix together mayonnaise, honey, lemon juice and zest, salt and pepper together.

Add the mayonnaise mixture and fold the ingredients.

I love the crunchiness of the broccoli and the bite of the red onions in this salad, but I thought why not add a little more crunch this time with some almonds?

And it was a great addition.

So thank you SanDee for your friendship and introducing me to Broccoli Grape Salad. It has become an absolute favorite.
