Welcome to Two Cups of Health. This is where you’ll find Healthy Delicious Dishes because I believe that nutritious dishes can be creative and fun.This is truly a labor of love for me for many reasons. I’ve always loved healthy food even as a child. When I went to the grocery store with my Mom, I skipped the candy bar aisle, and instead begged her to buy artichokes. I absolutely loved them. Yeah I know, it’s a little…ok, a lot…strange. But I even loved the smell of them as we drove on trips through the artichoke fields in California. We also headed out to Grueder’s Dairy weekly for our milk. A different kind of smell, but all good and the whole place was magical.
As much as I loved food, my career for many years was as an interior designer. I enjoyed the creativity of it and making things beautiful, and I especially loved working with my clients. I am still a member of the American Society of Interior Designers and have been for many years. And if you go to my Pinterest account under Two Cups of Health, you’ll find lots of food boards and a special board for beautiful table settings.
Food though, was still a huge part of my life, particularly healthy food. So for fun, I decided to take cooking classes and food writing classes along the way. One of the ones I remember was a food writing conference at the Culinary Institute of America in Napa. It was a very special conference because the top food editors from national magazines such as Saveur, Gourmet, the Atlantic, and so many more were invited to give the presentation.
As students we were given an assignment before we attended which was to be given to these editors for their assessment. The “simple” assignment was to write an article on “The Best Food in the World.” Good Grief! I loved all food. How do you come up with One food? So I did my best and turned it in.
When I arrived at the Culinary Institute, I talked to the other students about the assignment and they came up with rice, corn, etc. My article was so far out of reach that I knew I was doomed. So when I finally had a meeting with Corby Kummer, the editor of the Atlantic, I was nervous. He said, “You nailed it. A writer of your caliber should get out there and keep writing.” I was in heaven.
What was my article about? I told the story of how the best food in the world is fresh food from the source, and detailed about visiting farms and going to the docks and buying fish right off the boat. It really was an Aha moment. At that point I knew I had to follow my passion and so I did. I have been writing ever since. I especially love writing about food and health and actually did a two year research project from universities throughout the world showing that clinical studies proved various foods are beneficial at fighting diseases. These studies turned into my book, “Natural Healing Foods“.
