5 Ingredient Chicken Caprese Wedge

Instead of just a regular Caprese Salad, this 5 Ingredient Chicken Caprese Wedge becomes a Full-Meal Deal. A delicious, easy, healthy recipe in under 5 minutes!

About 5 Ingredient Chicken Caprese Wedge

Wedge Salad.  I can’t tell you how many times I’ve ordered it at restaurants, like Brio, where if you ask you can have all the ingredients off to the side. Then you can neatly arrange the salad the way you like it.

It’s also easy to make at home as you will see in this recipe. It’s so quick to throw together and it always adds color and great taste to any main dish.  

But a regularly Wedge is really just a salad and I was thinking of maybe trying to ramp it up a bit. Something maybe for dinner.

I had some beautiful leftovers from the rotisserie chicken I had picked up at the store the day before.  So maybe…  Caprese Salad with Chicken. But still I wanted it to be more. 

I had this gorgeous head of lettuce. Can lettuce be gorgeous? Sure it can. And it makes a great Wedge Salad. Now we’re getting somewhere.  

And as it turns out this easy healthy recipe has only 4 ingredients. Five if you count the balsamic glaze for  the dressing.  

So the 5 Ingredient Chicken Caprese Wedge was born.  And the bonus is that dinner is on the table in less than 10 minutes and it’s totally delicious

Let’s make it.

  • Iceberg lettuce
  • Cherry tomatoes
  • Cooked chicken, shredded
  • Mozzarella cheese
  • Balsamic glaze

How to make 5 Ingredient Chicken Caprese Salad

I always peel off the wiltey outer layers on a head of lettuce and wash it well before I ever cut into it.  So after washing just cut the lettuce in half and then half again to make 2 wedges and add  each to a serving bowl.

See how easy this is?

Then add cherry tomatoes and shredded chicken to each bowl.  

With an 8 oz. ball of Mozarrella, just cut in half and then thinly slice the cheese into 6 rounds.  Save the rest for later. Then cut the rounds into 1/4” pieces.  Divide the mozzarella between the two bowls.

And now for the dressing.  Yes, you can make your own dressing, but good ol’ Trader Joe’s has a delicious addition to this salad that really makes it fabulous. 

It’s Trader Giotto’s Balsamic Glaze.  It’s a balsamic glaze that thick and rich and even made in Modena, Italy.

It was made for this salad. Actually, it was make for a lot of things, but I really do like it on this salad. It just gives it a great tang.

Just drizzle about a Tbsp over each salad and then enjoy ever wonderful bite.

Ingredients

  • 1/2 Head Iceberg lettuce
  • 12 Cherry tomatoes
  • 1 Cup Cooked chicken breast Shredded
  • 1/2 8 oz Mozzarella ball
  • 2 Tbsp Trader Giotto's Glaze

Instructions

  • Cut the iceberg lettuce half in half again to make 2 wedges. Add each to a serving bowl.
  • Add 6 cherry tomatoes to each bowl.
  • Cut Mozzarella half into 1/4 slices. Then cut slices into bite sized strips.  Divide the cheese strips between the 2 bowls.
  • Add a Tbsp drizzle of the Glaze to each bowl and serve.
