Split each vanilla bean lengthwise to expose the seeds inside.
Add the split beans to a 750 ml bottle of Vodka.
Cap the bottle, give it a good shake and place it in a cool, dark place.
Shake the bottle twice a week for the next 8 weeks.
After 8 weeks the vanilla will be a rich dark brown.At this point there will be seeds at the bottom of the bottle, which can easily be removed by straining through a sieve. Pour into sterilized small bottles, add a bow and you have a perfect gift for your favorite foodie friends.
