While apples are baking, pat the Pork Chops dry with a paper towel and rub them with 1/2 tsp oil.  Season on both sides with salt, pepper, Rosemary, Sage and Fennel, then sprinkle both sides of Pork Chops with flour.  Add remaining 1/2 tsp of oil to fry pan cook over medium high heat until golden brown on bottom, about 3-4 minutes.  Remove to plate.  When apples have reached their 30 minute prebaking time, place Pork Chops on top of apples with browned side up.  Continue to bake 15 more minutes or until Pork Chop temperature reaches 145 degrees.  After removing from oven, tent with foil and let rest while you make sauce.
Heat pan you cooked Pork Chops in to medium high and add wine scraping up any of the browned bits in the pan.  Cook about 3 minutes until wine has reduced by half, then whisk in butter and continue cooking another 2 minutes until sauce has thickened a bit, then whisk in mustard and let cook for 1 more minute.
To serve,  add 1/2 of the sauce to each plate and place Pork Chop on top of sauce.  Add apple slices along the side .
