Slow Cooked Pork Tacos with Chipotle Cream
These Slow Cooked Pork Tacos with Chipolte Cream are smoky, savory and melt in your mouth tender.

Ingredients
- 1 1/2 Lb Pork loin
- 1/4 Tsp Salt
- 1/4 Tsp Pepper
- 1 Tbsp Smoked paprika
- 1 Tbsp Olive oil
- 1/2 Yellow Onion Sliced
- 2 Cloves Garlic Minced
- 1/2 - 1 Chipotle Pepper in Adobo Sauce, diced Depends on the heat you like
- 1/4 Cup Black olives Sliced
- 1 Cup Chicken broth, low sodium
- 1 Lime Juiced
- 1 Tbsp Adobo Sauce
- 1/4 Cup Creme Fraiche
- 1/4 Cup Tomatoes Sliced
- 1/2 Cup Cheddar cheese Grated
- 12 Corn tortillas
Instructions
- Season pork loin with salt, pepper and smoked paprika. Add olive oil to frypan over medium high heat and add pork loin. Sear 3 minutes on each side and add to slow cooker set on low.
- To same frypan, add onions and saute 2 minutes, then add garlic and continue to cook 2 minutes more. Pour onion and garlic mixture over pork loin. Add chipotle pepper, chicken broth, 1/2 of the lime juice and 1/2 of the black olives. Cook on low for 8 hours until tender.
- When pork is finished, shred in slow cooker using two forks.
- In a small bowl mix the Creme Fraiche, the Adobo sauce and the remaining lime juice for the Chipotle Cream.
- Cook tortillas in frypan 1 minute on each side and keep warm.
- To assemble: Add 2 Tbsp of the Pork to each of the 12 tortillas. Top each with tomatoes, cheddar cheese and the remaining half of the sliced black olives. Finally top with chipotle cream as desired.
