- 1 Lb Pork tenderloin
- 1/2 Tsp Olive oil
- 1/2 Tsp Fennel, dried Ground
- 1/2 Tsp Rosemary, dried Ground
- 1/2 Tsp Sage, dried Ground
- 1/4 Tsp Salt
- 1/2 Tsp Pepper
- 4 Slices Bacon Prefer Applewood Smoked
Preheat oven to 400 degrees F
Rub the tenderloin on all sides with olive oil.
Mix fennel, rosemary, sage, salt and pepper together and sprinkle mixture evenly over both sides of the tenderloin.
Carefully wrap bacon slices over and under pork tenderloin. Then place wrapped tenderloin in a baking dish.
Place the dish in the oven and bake 15-18 minutes until the bacon is browned and crisp and the tenderloin registers 145 degrees.
Remove from oven and let the tenderloin rest 10 minutes before slicing.
