Bacon Wrapped Pork Tenderloin

Ingredients

  • 1 Lb Pork tenderloin
  • 1/2 Tsp Olive oil
  • 1/2 Tsp Fennel, dried Ground
  • 1/2 Tsp Rosemary, dried Ground
  • 1/2 Tsp Sage, dried Ground
  • 1/4 Tsp Salt
  • 1/2 Tsp Pepper
  • 4 Slices Bacon Prefer Applewood Smoked

Instructions

  • Preheat oven to 400 degrees F
  • Rub the tenderloin on all sides with olive oil.
  • Mix fennel, rosemary, sage, salt and pepper together and sprinkle mixture evenly over both sides of the tenderloin.
  • Carefully wrap bacon slices over and under pork tenderloin.  Then place wrapped tenderloin in a baking dish.
  • Place the dish in the oven and bake 15-18 minutes until the bacon is browned and crisp and the tenderloin registers 145  degrees.
  • Remove from oven and let the tenderloin rest 10 minutes before slicing.
