Creamy Lemon Chicken Soup

Ingredients

  • 1 Tbsp Butter
  • 1/4 Cup Celery Chopped
  • 1/4 Cup Onion Chopped
  • 1/4 Cup Carrots Chopped
  • 1 Cup Chicken Cooked and cut into bite size pieces
  • 2 Tbsp Butter
  • 2 Tbsp Flour Wondra
  • 1 1/2 Cups Milk
  • 1/2 Tsp Salt
  • 1/2 Tsp Pepper
  • 1/4 Tsp Paprika Smoked
  • 1/4 Tsp Garlic powder
  • 1 Lemon Juiced
  • 1 Tbsp Chives Chopped

Instructions

  • To a stockpot over medium high heat, add butter then add celery, onion and carrots and sauté 7-8 minutes. Remove from pot and set aside.
  • To same stockpot add butter and flour.  Allow to cook for 1 minute then add milk and stir until thickened.  Add salt, pepper, smoked paprika, garlic powder and lemon juice.  Simmer on low 5 minutes. 
  • Add to serving bowls and top with chives.
